Adding chocolate takes it; takes the humble pound cake to the next level. And then adding orange to that chocolatey goodness and OMG this becomes the most amazing pound cake that you can eat!! The flavour profile is out of this world. So delicious.

Isn’t chocolate ganache one of the most satisfying additions to baked goods?! Made of just two ingredients, chocolate and double cream, ganache is the basis of a variety of truffles, filling for chocolate tart or layer cakes and the drizzled topping for ice-cream and desserts.

A tip for you- choose the best quality dark chocolate that you can buy. The high cacao-solids ratio provides the most luxurious, satisfying ganache that isn’t sweet or sickly.

Let’s talk about ratios.

  1. Chocolate truffles use two parts chocolate to one part double cream. (2:1)
  2. For a thick chocolate ganache filling for cakes, you need equal parts chocolate to double cream. (1:1)
  3. A cake drizzle or glaze uses 1 part chocolate to two parts double cream. (1:2)

Ingredients

For the chocolate pound cake

  • 3/4 cup (75g) unsweetened Dutch-processed unsweetened cocoa powder
  • 1/4 cup (60ml) boiling water
  • 3 tablespoons (45ml) of freshly squeezed orange or mandarine juice
  • 1 1/2 cups (180g) plain flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup (225g) unsalted butter, softened
  • 1 cup (200g) caster sugar
  • 1/2 cup (100g) brown sugar
  • Zest of two oranges (or alternatively 4 mandarins)
  • 2 teaspoon vanilla extract
  • 4 eggs

For the chocolate ganache

  • 1 1/2 cups (250g) dark chocolate, chopped
  • 1 cup (200ml) double cream
  • 1 tablespoon (15ml) orange juice
  • 2 tablespoons (15g) cacao nibs, optional

Instructions

For the chocolate pound cake

  1. Pre-heat your oven to 180C and place your oven shelf in the centre. Grease and line with baking paper, a 21 x 13cm loaf tin.
  2. Mix the cocoa powder and orange juice with the boiling water in a small bowl until the powder has fully dissolved and is smooth – set aside to cool. In a separate bowl sift the flour, baking powder and salt.
  3. Add the butter into the bowl of your electric mixer, fitted with the paddle attachment (or using your handheld electric whisk) and beat the butter until smooth. Add the caster sugar, brown sugar, orange zest and vanilla extract and beat for about 5 minutes until light and creamy.
  4. Beat in the eggs, one at a time, mixing until combined between each addition. Ensure that you scrape down the sides of the bowl. Add the cooled cocoa powder mixture and beat until combined. Add the flour mixture gradually and beat until just combined.
  5. Pour cake batter in the greased loaf tin and bake for 60 to 70 minutes or until a skewer comes out clean. Leave the cake in the tin for ten minutes and then run a knife around the edge before turning out onto the wire rack to cool completely.

For the chocolate ganache

  1. Place the cream into a small saucepan and gently heat on the stove top on a low heat. When the cream is warm and starting to simmer, do not let it boil, then pour cream over the chocolate and let it sit for 2-3 minutes. Then start whisking in the same direction until all the cream and chocolate have emulsified and combined. Whisk in the orange juice. Leave to cool for ten minutes and then pour over the chocolate pound cake and sprinkle the cacao nibs for decoration.
  2. Serve with whipped cream or a scoop of ice-cream and enjoy!
